As Trekkies, we've never been short of Star Trek content. There are so many TV shows and movies that we can watch an episode a day sequentially, and it would take us at least a couple of years to finish them all.
But just because there's a lot of Star Trek content collectively doesn't mean that there's enough new and good Star Trek content coming out right now. If you look at the number of episodes for more recent series like Strange New Worlds or Lower Decks, they have a lot fewer episodes (20 and 50, respectively) than older Star Trek staples like The Next Generation (178 episodes) or Deep Space 9 (176 episodes).
One of the best things about Star Trek is the ability to have horrible filler episodes that don't decrease the prestige and quality of the whole series, and the only way to have that is to produce as many episodes as humanly possible. Unfortunately, our new streaming world can't allow that
